Nobleman Brewing Company

Our beer is inspired by noble deeds and courageous hearts. It is carefully brewed with a labour of love to ensure complexity and flavour with every sip.

The idea of a brewing company first manifested with two cousins in 2014. I windy twisty road of experience and fate brought it all together for us with the establishment of Nobleman Brewing Company in 2018. We have pulled together a dynamic team of people, 5bbl brewery and a lovely property from we hope to grow Nobleman. We are using both the best techniques and ingredients to brew beer for a wide variety of people and for a wide variety of occasions. We hope the brewery and the beer are a companion to great times for everyone. ​

Nobleman Beers

“One of the defining things about the style is the yeast. The strains vary quite a bit, but Dupont’s famously phenolic one is likely related to red-wine yeast. It is tolerant of very high fermentation temperatures — above 90°F (32°C), where it produces a lot of peppery phenols but not a lot of esters. Most yeasts at those elevated temperatures would create undrinkably estery beer, reeking of nail polish remover. It’s a slow and cranky yeast to deal with, so many brewers start their saison with it and then switch over to a conventional yeast to finish the job. Spices are not required for the style, but grains of paradise, black pepper, and others are sometimes used to complement the character of the yeast.”

Beers

“More than any other, American Pale Ale defines American craft beer. It is built on a base of pale ale malt, usually with the caramelly, raisiny flavors of crystal, counterbalanced by the fresh, pungent flavors of North American hops with their piney, citrus, and floral notes." "IPA is just a paler, stronger, hoppier style of pale ale.”

“Lager beer is fermented cool and conditioned cold, which means the chemistry of yeast metabolism is slowed down. The fruity top notes of esters and other chemicals produced by ale fermentations are found in lagers at much lower levels. ” “This means the flavors in lagers are cleaner, less complex, and more focused on the malt and hops — to the exclusion of almost anything else.”

ABV: 4.5%

"Light Ale, all-malt with a soft, lightly malty palate, some fruitiness, and a pleasant hop bouquet. The flavor is usually balanced with a light to medium bitterness, though the accent tilts towards malt. Some versions are very restrained with hops, making the beer sweet in character. Pale straw to deep gold in color." BCJP Style Guidelines. 

ABV: 4.5%

“A substyle has developed called “session IPA.” Technically, this style falls into the Pale Ale broader category but is perceived as a scaled-down and more drinkable version of the flavors found in full-strength IPAs. As a result, it tends to be at the pale and light-bodied end of the pale ale style, and hop aroma tends to be pretty pronounced as well.”

“German Schwarzbier. Long brewed in certain parts of Germany, especially Augsburg, Bad Köstritz, and Kulmbach, they are Germany’s darkest beers. Schwarz means “black,” but in certain regions this term is casually used to denote any dark beer. ”
